Watson Inc. – West Haven, CT – Watson’s Film Technology Division has formulated a soft, pliable sheet of edible film containing customized blends of flavors, seasoning and spices. The film is applied to meat or vegetables in the cooking process. The film melts and the flavor is transferred to the meat or vegetable.
This technology would allow a restaurant or food service establishment to change the flavor profile of a product such as a hamburger as it is prepared. This would allow for menu flavor extensions such as chili burgers, teriyaki burgers, garlic herb burgers or onion burgers. Since the flavor dose is controlled by the film, the flavor profile would always be consistent. Applications could include seasonal flavor extensions and promotions.
Meltable films can also be used to improve the appearance of microwaved foods. For example a chicken breast could be wrapped in a meltable film which was imprinted with “grill marks.” After microwaving the result looks very similar to a grilled chicken breast. The flavor and aroma are also improved.
