Baked Goods - Low fat and & Non-Fat Baked Goods: UltraCel™ is highly effective in the replacement of fat and shortening in baked goods. Applications include: Cookies, cakes, brownies, snack cakes, sweet dough, muffins, pie crusts, tortillas and danish.
Beverages- High fiber juices and beverages: UltraCel™ exhibits exceptional functional characteristics for use in beverage systems. In addition to contributing a source of dietary fiber that will not settle out, UltraCel™ offers unique suspension and stabilization properties. Moreover, UltraCel's™ unique structure makes it completely organoleptically undetectable. Applications include: Ready to drink beverages, thickened juices, high fiber beverages, powdered drink mixes, weight loss and meal replacement shakes.
Stabilized Beverages: UltraCel™ displays excellent water retention capabilities and acts as a suspension and stabilizing agent in beverages and salad dressings. Settling out of nutrients, cocoa or proteins is prevented.
Dairy- Reduced Fat Dairy Products: UltraCel™ is well suited for fat replacement in dairy applications. UltraCel™offers unique textural and stabilization properties which mimic the characteristic mouth feel of full fat dairy products. UltraCel™ also provides many of the benefits traditionally achieved by the use of modified starches such as moisture control, bulking and clouding characteristics and may eliminate the need to add starches. UltraCel™ is also heat stable in high heat processes such as pasteurization as well as being freeze - thaw stable. In frozen dairy products, UltraCel™ functions to reduce ice crystal formation, increases overflow and delays melt. Applicable products include: yogurts, dairy based beverages, butter, soft cheese, cottage cheese, cream cheese, ice creams, mayonnaise, sour cream, spreads, etc...

In addition, UltraCel™ offers stabilization, thus enabling the suspension of herbs, spices and vegetable pieces in a "no shake" salad dressing.
Icing & Frosting - Low Fat and Fat Free Icings: Due to it's unique stabilization and organoleptic properties, UltraCel™ produces delicious creamy frostings, icings, fillings and boiled icings (or hot print icings).
Meats - Reduced fat comminuted meat products: UltraCel™ can be used to replace up to 30% of the meat, reducing both total fat and costs. Applications include Hamburgers, Frankfurters, processed meats, Sausages, etc.
Sauces - Reduced calorie, stabilized sauces: UltraCel™ provides a creamy mouth feel and stabilization for a wide variety of sauces, gravies and syrups.
